Vegan Tropical Fruit Bread Recipes
Banana bread
Ingredients
Wheat flour of 7 oz or 220g
1 tbsp baking soda
1 teaspoon baking powder
½ tsp salt
3floz or 100ml of oil
6oz or 185g of brown sugar
4 tbspcornstarch or cornflour
6 simple bananas (very cooked)
2 tbsp molasses (optional)
Raisins and chopped nuts (optional)
1 teaspoon cinnamon
1 tsp nutmeg
1 teaspoon cloves
1 teaspoon vanilla (also can use vanilla extract)
Setup
- Preheat oven to 350oF, 180oC or gas mark 3.
- Roll two simple cans. Fingertips with greaseproof paper.
- Put all ingredients in the food processor in the order they were listed and process for 20 seconds.
- Finally add the raisins and chopped nuts, if you include this, and process for another 5 seconds.
- Place in two loaves of bread. Sprinkle with cinnamon and extra sugar.
- Bake for 50 minutes or until inserted skewer comes out clean.
- Lift onto the rack and let cool.

Banana Beans Bread
Ingredients
4 cooked bananas (mashed)
1 lb or 450 g of flour
8 oz sugar or 225 g
4 oz or 110 g of vegan margarine
4 tbspcornstarch or corn flour
4½ oz or 125 g of beans (crushed)
1 tbsp baking powder
1 teaspoon vanilla (also can use vanilla extract)
½ tp shovel scar
3 oz or 75 g of raisins (chopped)
Salt
Setup
- Cream margarine and sugar together until it is hairy; add corn flour or corn flour.
- Roast flour together, baking powder and salt. Add in alternating with banana and nutmeg. Mix well and pour into a baking pan.
- Put the raisins and bake in a medium oven for 30 minutes.

Coconut Bread
Ingredients
12 oz or 375g vegan margarine
2 teaspoons of vanilla (also can use vanilla extract)
8 oz sugar or 250g of chocolate
6 tbspcornstarch or cornflour
4 oz or 120ml of water or coconut water
8ozor 225 g of coconut oil
1 lb or 450 g of flour
Cinnamon dash, mixed spices, nutmeg
2 tablespoons baking powder
3 oz or 100 g of raisins (optional)
3 oz or 100 g of cherry glacé (optional)
Decorate: Light brown sugar, coconut and cherry
Setup
- Preheat oven to 325oF, 160oC or gas mark 3.
- Pour two small cans. Fingertips with greaseproof paper.
- Put all ingredients in the food processor in the order listed in the flour and prepare 4 tablespoons grated coconut. Process for 20 seconds.
- Add raisins if you include this and process for another 5 seconds.
- Put the mixture in two loaves of bread in equal amounts.
- Drain the bottom of the breadcrumbs and fill with most of the coconut, cover them with a mixer so that they are in the center of the bread. It can be seasoned with a pinch of cinnamon and nutmeg and a little sugar to taste.
- Sprinkle the top with sugar, coconut residues and grated cherries, if using.
- Bake in the center of the oven for about an hour or until the inserted skewer comes out clean.
- Lift it to the rack and cool.
