The diabetes index is a description of this difference where we arrange carbohydrates according to their effect on blood sugar levels in the body. Therefore, we have to choose carbohydrates with a low sugar index, which causes minor fluctuations in sugar levels, and thus regulates the secretion of insulin in the blood.

Each type of food that contains carbohydrates has its own sugar index, and is determined in practice by feeding 10 healthy people of the type that we want to determine the sugar index for, so that the amount of carbohydrates in it is from 10-50 g, then measure the level of blood sugar every quarter of an hour, then draw the sugar curve The rate is taken for the 10 people and divides the curve area on the sugar index of the reference food, glucose, at the same weight as carbohydrates.

It hits the bottom of 100, so each item has its own sugar index, but you should know that the same food item may differ when calculated in more than one plant because the concentration of carbohydrates in each fruit is different, but the indicator is almost correct to a large extent.
